Sugar
Sugar is used as a sweetener (among others in the confectionery industry), flavouring and (highly concentrated) as a preservative.
Approximately 80% of the global sugar production is made of sugar cane, the rest being mainly made of sugar beet and is extracted through a refining process. The 5 largest producers are Brazil, India, the European Union, Thailand and China with a combined share of about 60% of global sugar production.
ICUMSA (International Commission for Uniform Methods of Sugar Analysis, http://www.icumsa.org) determines, through standardized tests, how white and well refined the sugar is (the lower the number, the whiter / more refined the sugar).
