Wheat flour

Flour is obtained by the milling of wheat and is one of the most important ingredients of food. This includes among others, the bakery industry. Flour also plays a fundamental part in the preparation of, for example, pizza and pasta.

The quality of flour is primarily dependent on the protein content and determines the application of flour as ingredient; for example, a low protein level is mainly used in the confectionery industry, a high protein level in the basic bakery industry.

The price of flour correlates heavily with the price of the commodity future Wheat, which at times shows large fluctuations, but equally depends on supply and demand changes at country of Origin.
